pressing play opens second window on iOS
Using the embedded player with URLs for streaming.
Works fine on PC/Mac/Android.
When the play button is clicked on an iOS phone. It opens in a second window rather than just playing on the page.

That is the expected behavior, iOS always opens videos in their native player.

there is a way to circumvent that as I understand it. Just trying to find it.

Not really, two things come to mind though. iPads and iOS applications that contain a webview, if I’m not mistaken that might circumvent it but then we are not talking web we are talking native iOS development.
