Where are the transcodes in the new platform?

I need to change one of the ones I already have and I can't find it in the dashboard anywhere.

I noticed these are missing as well, but the old ones I created show up as option in playback quality. Where did that template go?

A listing of the transcoding templates on your account are not currently available on the dashboard, but this is something that we’re looking into adding back in the future. For now, you can use our API and the /accounts/templates/list endpoint to retrieve a listing of your templates.
